Bean & Cheese Enchiladas

Today on the Bite Tonight: Bean & Cheese Enchiladas. 

If you frequent the blog, you know that I love Mexican food and can find tons of yummy meal ideas. Here’s an easy recipe for Bean & Cheese Enchiladas.

What you’ll need

1 can enchilada sauce

1 package of medium to large flour tortillas (you can use corn if you prefer).

1/2 cup diced white onions

1/2 cup diced green onions

1 can refried beans

1 package of shredded cheese

1 package of sliced muenster cheese.


1. Spread a couple spoonfuls of beans, enchilada sauce, a little onions, and muenster cheese on one end of a tortilla. I like to mix the onions, but you can use whichever you prefer or none at all.

2. Add a little more enchilada sauce before rolling up tortilla and placing seam down in a glass baking dish.

Tip: Pour a little enchilada sauce in the bottom of the glass baking dish before placing enchiladas to prevent burning.

3. Top with enchilada sauce and shredded cheese.

4. Repeat with remaining tortillas. 1-2 tortillas= 1 serving.


Bake in a 350 degree oven for about 25 -30 min or until cheese is melted and bubbly.

I love this recipe because it’s really easy and great in a pinch. I always keep a can of beans on hand and I always have cheese. The enchilada’s remind me of a bean and cheese burrito from Taco Bell, but without all the weird extra’s. Try it out!
