Today on the Bite Tonight: Pomegranate Strawberry Yogurt Smoothie
This morning I was feeling good and wanted a light healthy breakfast to maintain that vibe throughout the day. Here’s an easy recipe that’s great to start any day.
– A few ice cubes
– 1 cup of water
– 3 tablespoons of Greek plain yogurt
– 6 strawberries
– A handful of blueberries
– 1/4 cup of Pom juice ( a couple glug glugs out of the bottle)
Wow Factor: I added 3 baby carrots for some extra vitamins. The berries overpower the carrots so it’s a great way to get hidden nutrients and sneak them in on your loved ones. You can also do this with cukes or spinach, but don’t add too much otherwise the veggie taste will come through.
Tip: Buy Greek yogurt in bulk. The individual cups can be expensive if not on sale and it’s cheaper when you buy a quart. It will also force you to eat more delicious, good for you, Greek yogurt before it expires! It’s great in smoothies, mixed with fresh fruit, or as a substitute to sour cream.
Blend until smooth. You may need to add a couple more splashes of water if the smoothie is too thick.
There’s something about a mason jar that screams “Summer” so I use them as much as possible.
